After several years in the restaurant business, brothers Tom and John Knorr decided to take their combined restaurant knowledge and venture out on their own. In 1996 they bought The Red Roost Restaurant in rural Whitehaven, MD. The Red Roost has been a landmark Eastern Shore Eatery (located in a refurbished chicken house) since 1974, serving all you can eat steamed crabs, shrimp, fried chicken, local corn on the cobb and more. The relaxed, friendly atmosphere, synonymous with Eastern Shore life, is the perfect setting to enjoy the area's world famous seafood bounty. Over the years, the brothers have made improvements to both the building and the business including a well-stocked gift shop and an expanded entrée menu that now includes mouthwatering seafood and steak dishes. The Red Roost remains a summertime favorite for locals and travelers alike.

In addition to The Red Roost, Tom and John have built many more successful restaurants and even a brewery. All these businesses are known as the Southern Boys Concepts. In 2001 they opened Boonies in Tyaskin, MD. Next, in 2006, SoBo's Wine Beerstro opened as the Knorr's third restaurant. Three years later, the Knorr brothers opened a craft brewery in Delmar, Delaware called Evolution Craft Brewing Company which found much success and outgrew the Delmar facility quickly and has since moved to Salisbury, MD. Also 2009 marked the opening of Specific Gravity Pizzeria and Bottle Shop in Salisbury.
